After I made the quinoa black bean burgers (recipe here) a few days back, I have been wanting to use different beans to make burgers.
Today I had made rajma ( red kidney beans in a tomato based gravy) and brown rice for lunch. Before making the rajma I took out some cooked kidney beans and kept them aside as I wanted to use them to make these burgers for dinner. I used the red kidney beans and some left over brown rice to create this quick, delicious and healthy burger. The burgers came out great and we all loved them. Here is the recipe.
Ingredients
- 1 cup cooked red kidney beans
- 1/2 cup cooked brown rice
- 1 small boiled potato (optional)
- 1 garlic minced
- 1/8 cup diced red onion
- 1/2 tsp red chili powder
- 1 tsp cumin powder
- 1/2 tsp garam masala (optional)
- 3-4 tbsp bread crumbs
- 2 tsp salsa ( I used the store bought bottled salsa)
- Salt and pepper to taste
Method
- Pan fry the onions in a few drops of oil till browned.
- In a bowl roughly mash the red kidney beans. Add the roughly mashed brown rice, mashed potato, garlic,pan fried onions, chilli powder,garam masala cumin powder, bread crumbs, salsa,salt and pepper. Mix it well.
- Divide the mixture into 4 portions.
- Grease oil on your palms and shape the mixture into patty of desired size.
- Refrigerate the burgers for a couple of hours. You can freeze them too if you plan to use them at a later date.
- Grill the burgers on the grill or on a pan with a few drops of oil.
- Warm the burger buns. Place the burger in a bun add condiments of choice and enjoy.
Notes
- I had my burger in a whole wheat ciabatta bun with mustard,tomato, avocado slices, pickles, relish, diced red onions, grated cheese and hot sauce.
- You can also use canned kidney beans. Rinse the beans well before use.
- You can adjust the quantity of spices to your liking.
- If the mixture is difficult to handle and you find it hard to shape the burgers increase the quantity of bread crumbs.
