Penne With No Cook Pasta Sauce


Pasta is dearly loved in our house and is one of my favourite quick fix meal. In an attempt to avoid refined carbs, whole wheat pasta was our pasta of choice till we discovered the brown rice-quinoa-amaranth pasta in Costco. I am so glad we found it - we absolutely love this pasta and I think taste wise its so much better than its whole wheat counterpart without compromising the nutritional value.

I found this recipe of pasta with no cook pasta sauce in one of the children's cook book which I had borrowed from the library and thought it was interesting. Unfortunately, I don't remember the name of the book but if I find it again I will update it here. I love this recipe as it does not  require spending too much time in the kitchen and is healthy and tasty at the same time. I have made this pasta several times already over the summer and its a big hit. Here is the recipe.



Ingredients
  • 3 cups uncooked pasta (I used penne)
  • 3 tomatoes diced
  • 2 garlic cloves minced
  • Handful of basil leaves roughly chopped
  • 1/2 cup tomato purée (store bought)
  • 1/2 tsp Italian seasoning
  • 1/4 tsp red chilli powder / paprika ( optional)
  • 2 tbsp EVOO
  • Pepper to taste
  • Cheese for the garnish (I used grated goat cheese)
  • Water and salt for cooking pasta
Method
  • Fill up a large pot with water. Add salt and bring the water to a boil. Add enough salt to the water so that the pasta gets seasoned properly.
  • Cook pasta as per the directions on the pack stirring at regular intervals.
  • Drain the pasta.
  • While the pasta is cooking mix diced tomatoes, tomato puree, EVOO, minced garlic, chopped basil leaves, Italian seasoning, red chilli powder and pepper in a bowl.
  • Add the cooked pasta to the bowl and toss well. Sprinkle cheese and serve.
