Oven Roasted Baby Potatoes


I don't cook elaborate or time consuming meals on weekends and plan some fun, quick and interesting meals.  This way I don't have to spend a lot of time in the kitchen (which I love) and at the same time dish out something nutritious and interesting. Last Saturday, for lunch we had baked bean wraps (recipe here) and for dinner I decided to make some oven roasted baby potatoes to go with some spinach and chickpea patties. Love, love, love these beauties, totally delicious and healthy. I roasted a packet of red skinned yellow fleshed baby potatoes and they turned out great. They had a shorter baking time and a creamy and buttery texture which was quite different from the texture and baking time of the mixed baby potatoes which I had used for roasting earlier. 

Nutrition wise, potatoes are high in carbohydrates, but all the carbohydrates in the potato are complex,  the main recommended energy source for our body. Potatoes in general are a great source of potassium, vitamin C, vitamin B6 and other minerals like zinc,iron,magnesium,phosphorous to name a few. About 20% of potato's nutrition is found in its skin.

A serving of 4 of these baby potatoes, is about 70 calories and meets 16% of your daily potassium requirements, 8% of your daily value of fibre, 10% of your daily value of vitamin C, 6 % of your daily iron requirements and 2% of your daily calcium requirements. This nutrition information was on the packet of potatoes. The entire packet of these baby potatoes (about 680g) with the seasoning is about 400 calories and serves 4.


Oven Roasted Baby Potatoes
Ingredients

  • 1 packet (1.5 pounds) baby potatoes
  • 2 garlic cloves
  • 1 tbsp oil
  • 1/4 tsp red chilli powder
  • 1/4 tsp rosemary
  • Sea salt to taste
  • Pepper to taste
Method

  • Cut the potatoes into halves without peeling. The potatoes are pre washed so no need to wash them again.
  • In a bowl, add the halved potatoes, minced garlic, red chilli powder, rosemary, salt, pepper, oil and mix it well.
  • Preheat the oven to 375 F.
  • Place the potatoes on a lined baking sheet and bake for about 30 minutes.
  • Transfer the baked potatoes to a serving bowl and serve hot.
Notes

  • I used red skinned yellow fleshed baby potatoes.
  • You can adjust the quantity of herbs and spices to suit your tastes.
  • Baking time may vary for other varieties of potatoes. I have previously used mixed baby potatoes and the baking time for those is about 60 mins at 375 F.For crispier potatoes (the mixed variety) bake at 400 F for an hour, flipping at the half way mark.
