Gajarachi Koshimbir (Carrot Salad)


Gajarachi koshimbir (carrot salad) is a traditional Maharashtrian style salad made with grated carrots, lemon juice, peanut powder and tempered with mustard seeds, asafoetida (hing) and green chillies. Koshimbir, a simple side to a meal can be made using any vegetables like cucumber, tomatoes, cabbage, beet root, radish or sprouts. Koshimbir can be made quickly and is scrumptious and healthy. Here is the recipe.


Gajarachi Koshimbir (Carrot Salad)

Ingredients

  • 1 heaped cup grated organic carrots
  • 2 tsp sugar
  • 1 tbsp lemon juice
  • 1/8 cup peanut powder 
  • 2 green chillies chopped
  • 1/4 tsp mustard seeds
  • 1/4 tsp  asafoetida (hing)  
  • 1/4 tsp turmeric powder
  • 1 tsp oil for tempering
  • 1/8 cup cilantro 
  • Salt to taste
Method

  • Place the grated carrots in a bowl. Add salt, sugar and lemon juice and keep it aside.
  • Heat oil in a tempering pan. Add mustard seeds, hing, turmeric powder and green chillies. Once it starts spluttering take it off the stove and keep it aside.
  • Add peanut powder and chopped cilantro leaves to the grated carrots and mix well.
  • Add the tempering to the carrots and mix well. 
  • Refrigerate for some time and serve.
Notes

  • Chopped tomatoes can be added to the salad as a variation.
