Gajarachi koshimbir (carrot salad) is a traditional Maharashtrian style salad made with grated carrots, lemon juice, peanut powder and tempered with mustard seeds, asafoetida (hing) and green chillies. Koshimbir, a simple side to a meal can be made using any vegetables like cucumber, tomatoes, cabbage, beet root, radish or sprouts. Koshimbir can be made quickly and is scrumptious and healthy. Here is the recipe.
- 1 heaped cup grated organic carrots
- 2 tsp sugar
- 1 tbsp lemon juice
- 1/8 cup peanut powder
- 2 green chillies chopped
- 1/4 tsp mustard seeds
- 1/4 tsp asafoetida (hing)
- 1/4 tsp turmeric powder
- 1 tsp oil for tempering
- 1/8 cup cilantro
- Salt to taste
Method
- Place the grated carrots in a bowl. Add salt, sugar and lemon juice and keep it aside.
- Heat oil in a tempering pan. Add mustard seeds, hing, turmeric powder and green chillies. Once it starts spluttering take it off the stove and keep it aside.
- Add peanut powder and chopped cilantro leaves to the grated carrots and mix well.
- Add the tempering to the carrots and mix well.
- Refrigerate for some time and serve.
Notes
- Chopped tomatoes can be added to the salad as a variation.
