Kulfi


Kulfi is a frozen dairy dessert and India's favourite ice cream. Kulfi is traditionally prepared by evaporating sweetened and flavoured milk by heating it on a low flame while stirring continuously to prevent the milk from sticking to the bottom of the vessel and burning, until its volume is reduced by half. This sweetened and reduced mixture is then put into kulfi moulds and frozen to make the super delicious kulfi. Kulfi is available is different flavours and some of the popular ones are malai, pista and mango. 

Kulfi has a distinct flavour and needless to say, all of us love it. It's summer in our neck of the woods, which is the perfect time for ice creams and frozen treats. Kulfi seemed to be the perfect answer to beat the heat. I however, wanted a simpler and a quicker process to whip up this delicious dessert and certainly did not want to spend a lot time in the kitchen. That's so me right? 

I came across this fantastic, easy peasy kulfi recipe and went straight ahead and tried it out. The result was a fantastic, creamy and delicious kulfi ready in no time and without any effort. This one is sure to impress, so go ahead and try it out for your next dinner party. Here is the recipe.


Kulfi

Ingredients

  • 1 (14 ounce) can evaporated milk
  • 1 cup heavy cream or whipping cream (35% milk fat)
  • 1 (14 ounce)  can sweetened condensed milk
  • 1 tsp cardamom powder
  • 1 tsp Everest milk masala 
Method
  • In a large bowl, stir together evaporated milk, cream, condensed milk, cardamom powder and Everest milk masala.
  • Pour into Popsicle moulds and freeze overnight. 
  • That's it ! Kulfi is ready. Before serving dip the moulds in warm water, un mould and enjoy.
Notes
  • Everest milk masala is a mixture of ground nuts like pistachios, almonds etc. You can use ground nuts instead of this masala.
  • Plastic cups can also be used to freeze kulfi. I used Popsicle moulds and plastic cups.
