I tasted this sabzi at my husbands aunts place when we moved to the US back in 2004 and loved it instantly. I had never tasted carrot sabzi and I took the recipe from A's aunt. I have been making this regularly since then. It is a very simple everyday kind of sabzi but is super tasty and lip smackingly delicious. We have this with rotis but this sabzi can also be wrapped in tortillas to make a filling lunch box meal.
Go ahead and try this if you want to make something simple and easy. Here is the recipe
Ingredients
- 3 potatoes diced
- 4-5 carrots diced
- 1/4 cup green peas
- 1 green chili minced
- 3 garlic cloves peeled and minced
- 1 tsp cumin seeds
- 1/2 tsp hing
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1 tsp coriander powder
- 1tsp kasuri methi crushed fine
- 1 tsp amchur ( dry mango ) powder
- 1/4 cup water
- Salt to taste
- Oil for tempering
Method
- Heat up some oil in a wok.
- Add hing, turmeric powder, green chili, cumin seed and garlic and saute till fragrant.
- Add potatoes, carrots and green peas and fry for some time and cover the wok with a lid and cook on a low flame till almost done.
- Add red chili powder, coriander powder, dry mango powder, kasuri methi, salt and about 1/4 cup water. Mix well and cook till done.
- Serve hot with rotis.
