Brown Rice Burritos



As I had mentioned earlier, I created this blog for my children especially for my daughter who wants me to note down all the recipes in one place. And what better way to do that than recording them in a blog?
 
 So at her insistance I did create the blog and blogged about a few recipes and then went back to being the lazy me. I am extremely lazy when it comes to taking pictures, uploading them and typing out the recipes. The most important factor which keeps me from blogging is  noting down the quantities of each ingredient in the recipe as I am so used to eyeballing. So thanks to "Lazy Me" there was a long silence on the blog. So what has changed now ? Nothing ..I am still as lazy as I was. So whats motivating me to blog now? A couple of things..first, .my daughter has agreed to take over the photography part. Second, thanks to my new i pad uploading pictures is easier than ever....So here I am back with a new healthy recipe.
 
Brown rice has become an integral part of our diet these days. We have brown rice with Sai Bhaji (a Sindhi spinach preparation), Dal Makhani and Paneer Makhani. I been toying with the idea of making chinese fried rice using  brown rice but have not tried it out yet. This is on my "To Do" list.
 
I am always on the lookout for new brown rice recipes to add some variety to our dinner table. Today I felt like having the Mexican burritos and so decided to make a brown rice filling for the burritos. We had the burritos with some steamed broccoli and light sour cream for dinner. The verdict was a 5 star rating from everyone and the result was  one happy mommy. Enjoy this healthy and  scrumptious burrito. Here is the recipe.
 

BROWN RICE BURRITOS













Ingredients

For the rice

  • 1 cup brown rice
  • 1 onion
  • 4 cloves of garlic chopped fine
  • 1/2 cup tomato paste/puree
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1/4 cup broccoli florets
  • 1/4 cup spinach chopped
  • 1/4 cup cherry tomatoes halved
  • Cilantro chopped fine
  • 1  teaspoon cumin powder
  • 1/4 teaspoon red chilli powder
  • 1 tsp or to taste Franks hot sauce or any other hot sauce of your choice
  • Salt to taste

For the topping

Grated cheese, mashed avocado, lettuce, salsa, hot sauce.

Method
  • Cook the brown rice in rice cooker with 2.5 cups of water and keep aside.
  • Heat some oil in a wok and add chopped garlic and sautee for some time till the garlic becomes fragrant.
  • Add finely chopped onions and sautee till they become translucent.
  • Add tomato paste, chilli powder, cumin powder, hot sauce and salt.
  • Add corn, black beans,broccoli florets, cilantro, spinach, cherry tomatoes  and any other vegetables of your choice. Add 1/4 cup water and cook for some time.
  • Add the cooked rice and mix.
  • To make the burritos take 100 % whole wheat wraps and heat them slightly on a skillet. Take the wrap off the skillet and add the rice filling and  the toppings. Fold it up and toast it for some time and your burrito is ready to be served.
